A light, flavorful dish that combines cod fillets with cherry tomatoes, peppers, and olives, all baked to perfection.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1 pint cherry or grape tomatoes, halved
  • 1 bell pepper, sliced (yellow or red)
  • 1 small onion, thinly sliced
  • 1/3 cup olives (kalamata or green, pitted)
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 tsp dried oregano or Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, arrange the cod fillets.
  3. In a bowl, combine the cherry tomatoes, bell pepper, onion, olives, olive oil, garlic, lemon juice, lemon zest, oregano, salt, and pepper. Mix well.
  4. Pour the vegetable mixture over the cod fillets.
  5. Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.
  6. Serve warm.

Notes

Check for flakiness at about 20 minutes to avoid overcooking. Fresh herbs can enhance flavor after baking.
