- 4 cod fillets (about 6 oz each)
- 1 pint cherry or grape tomatoes, halved
- 1 bell pepper, sliced (yellow or red)
- 1 small onion, thinly sliced
- 1/3 cup olives (kalamata or green, pitted)
- 3 tbsp olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- Zest of 1 lemon
- 1 tsp dried oregano or Italian seasoning
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, arrange the cod fillets.
- In a bowl, combine the cherry tomatoes, bell pepper, onion, olives, olive oil, garlic, lemon juice, lemon zest, oregano, salt, and pepper. Mix well.
- Pour the vegetable mixture over the cod fillets.
- Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.
- Serve warm.
Notes
Check for flakiness at about 20 minutes to avoid overcooking. Fresh herbs can enhance flavor after baking.
