- 6 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 bell pepper, sliced
- 1 onion, sliced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix the olive oil, smoked paprika, dried oregano, salt, and pepper.
- Add the chicken thighs to the bowl and coat them thoroughly with the mixture.
- In a baking dish, place the sliced bell pepper and onion at the bottom.
- Arrange the seasoned chicken thighs on top of the vegetables.
- Bake in the preheated oven for about 35-40 minutes, or until the chicken is cooked through and the skin is crispy.
- Serve hot.
Notes
For extra flavor, marinate the chicken in the olive oil and spices for a few hours before baking. You can also switch up the vegetables for a different flair.
