Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix the olive oil, smoked paprika, dried oregano, salt, and pepper.
  3. Add the chicken thighs to the bowl and coat them thoroughly with the mixture.
  4. In a baking dish, place the sliced bell pepper and onion at the bottom.
  5. Arrange the seasoned chicken thighs on top of the vegetables.
  6. Bake in the preheated oven for about 35-40 minutes, or until the chicken is cooked through and the skin is crispy.
  7. Serve hot.

Notes

For extra flavor, marinate the chicken in the olive oil and spices for a few hours before baking. You can also switch up the vegetables for a different flair.
