Delightful Mediterranean pinwheels with a savory filling of feta, spinach, olives, artichokes, and roasted red peppers, wrapped in crispy puff pastry.
Ingredients

- 1 sheet of puff pastry, thawed
- 1/2 cup feta cheese, crumbled
- 1/2 cup spinach, chopped and cooked (squeeze out excess water)
- 1/4 cup Kalamata olives, chopped
- 1/4 cup artichoke hearts, chopped
- 1/4 cup roasted red peppers, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the thawed puff pastry sheet on a lightly floured surface.
- Spread the crumbled feta cheese evenly over the pastry.
- Layer the cooked spinach, chopped Kalamata olives, artichoke hearts, and roasted red peppers on top of the feta.
- Carefully roll the pastry into a log, sealing the edges.
- Slice the log into 1-inch thick pieces and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes, or until golden brown.
- Serve warm or at room temperature.
Notes
Squeeze out excess water from cooked spinach for best results. Customize with your favorite ingredients.
