Description

Delightful Mediterranean pinwheels with a savory filling of feta, spinach, olives, artichokes, and roasted red peppers, wrapped in crispy puff pastry.


Ingredients

  • 1 sheet of puff pastry, thawed
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup spinach, chopped and cooked (squeeze out excess water)
  • 1/4 cup Kalamata olives, chopped
  • 1/4 cup artichoke hearts, chopped
  • 1/4 cup roasted red peppers, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the thawed puff pastry sheet on a lightly floured surface.
  3. Spread the crumbled feta cheese evenly over the pastry.
  4. Layer the cooked spinach, chopped Kalamata olives, artichoke hearts, and roasted red peppers on top of the feta.
  5. Carefully roll the pastry into a log, sealing the edges.
  6. Slice the log into 1-inch thick pieces and place them on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  8. Serve warm or at room temperature.

Notes

Squeeze out excess water from cooked spinach for best results. Customize with your favorite ingredients.
