Description

Delightful Mediterranean pinwheels made with feta cheese, olives, and roasted red peppers, wrapped in flaky puff pastry.


Ingredients

Scale
  • 1 sheet of puff pastry, thawed
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup spinach, chopped and cooked (squeeze out excess water)
  • 1/4 cup Kalamata olives, chopped
  • 1/4 cup artichoke hearts, chopped
  • 1/4 cup roasted red peppers, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a lightly floured surface.
  3. Spread the crumbled feta cheese evenly over the pastry.
  4. In a bowl, mix together the spinach, Kalamata olives, artichoke hearts, and roasted red peppers.
  5. Spread the mixture over the feta cheese layer.
  6. Roll the pastry tightly to form a log.
  7. Slice the log into pinwheels, about 1-inch thick.
  8. Place the pinwheels on a baking sheet lined with parchment paper.
  9. Bake for 15-20 minutes, or until golden brown.
  10. Serve warm.

Notes

Can be served with tzatziki sauce or hummus. Store leftovers in an airtight container in the fridge for up to 3 days.
