Description
Delightful Mediterranean pinwheels made with feta cheese, olives, and roasted red peppers, wrapped in flaky puff pastry.
Ingredients

- 1 sheet of puff pastry, thawed
- 1/2 cup feta cheese, crumbled
- 1/2 cup spinach, chopped and cooked (squeeze out excess water)
- 1/4 cup Kalamata olives, chopped
- 1/4 cup artichoke hearts, chopped
- 1/4 cup roasted red peppers, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the thawed puff pastry on a lightly floured surface.
- Spread the crumbled feta cheese evenly over the pastry.
- In a bowl, mix together the spinach, Kalamata olives, artichoke hearts, and roasted red peppers.
- Spread the mixture over the feta cheese layer.
- Roll the pastry tightly to form a log.
- Slice the log into pinwheels, about 1-inch thick.
- Place the pinwheels on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until golden brown.
- Serve warm.
Notes
Can be served with tzatziki sauce or hummus. Store leftovers in an airtight container in the fridge for up to 3 days.
