Description

Ingredients

  • 1 lb ground beef
  • 1 cup bread crumbs
  • 1/2 cup onion, chopped
  • 1/2 cup milk
  • 1 egg
  • Salt and pepper to taste
  • 4 medium potatoes
  • 1 cup cheddar cheese, shredded
  • 1 cup corn, cooked

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, bread crumbs, onion, milk, egg, salt, and pepper. Form the mixture into a loaf shape and place it in a baking dish.
  3. Bake in the oven for 1 hour.
  4. While the meatloaf is baking, wash and pierce the potatoes with a fork. Bake in the same oven for about 45 minutes or until tender.
  5. Cook the corn in boiling water for 3-5 minutes, then drain.
  6. Once the potatoes are done, slice them open, top with melted cheddar cheese, and serve alongside the meatloaf and corn.

Notes

Add your favorite seasonings to the meat mixture for extra flavor. For a crispy topping, spread a layer of ketchup or barbecue sauce on top during the last 10 minutes of baking.
