- 2 cups mashed potatoes, cold
- 1 egg, lightly beaten
- 1/4 cup all-purpose flour, plus more for dusting
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 pound ground beef
- 1/4 cup chopped onion
- 1/4 teaspoon garlic powder
- 1/4 cup shredded cheddar cheese
Instructions
- In a bowl, combine the cold mashed potatoes, beaten egg, flour, salt, and pepper. Mix well until everything is combined.
- In a skillet, heat the olive oil over medium heat. Add the ground beef and chopped onion and cook until the beef is browned. Drain excess fat and stir in the garlic powder. Season with salt and pepper to taste.
- Take a small amount of the potato mixture and flatten it in your hand. Place a spoonful of the cooked ground beef and a pinch of cheddar cheese in the center.
- Bring the edges of the potato mixture together to enclose the filling and form a patty. Gently flatten the patty and dust it lightly with flour.
- Heat a little more olive oil in the skillet over medium heat. Cook the patties for 3-4 minutes per side, or until golden brown and heated through.
- Serve hot with sour cream if desired.
Notes
Use leftover mashed potatoes for quick preparation. Customize with other ingredients and spices for different flavors. Store cooked patties in the fridge for up to three days or freeze for two months.
