Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 3 medium potatoes, peeled and chopped
  • 1/4 cup butter
  • 1/3 cup milk (or dairy-free alternative)
  • 1 cucumber, diced
  • 1 large tomato, diced
  • 1 tsp dried dill
  • Juice of 1/2 lemon
  • Salt and black pepper (for salad)

Instructions

  1. Cube the chicken and toss it with olive oil, paprika, garlic powder, oregano, salt, and pepper. Pan-sear until golden and cooked through.
  2. Boil the potatoes in salted water for 12–15 minutes. Mash with butter and warm milk until silky smooth.
  3. Mix diced cucumber and tomato, sprinkle with dried dill, a pinch of salt, black pepper, and a splash of lemon juice.
  4. In your container, layer creamy mashed potatoes in the center. Place the juicy chicken cubes on one side, and the bright, crisp salad on the other.
  5. Store up to 4 days in the fridge. Reheat the mash and chicken separately.

Notes

For extra flavor, marinate the chicken for a few hours or overnight. Consider using dairy-free butter and a plant-based milk alternative for a dairy-free option.
