- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 3 medium potatoes, peeled and chopped
- 1/4 cup butter
- 1/3 cup milk (or dairy-free alternative)
- 1 cucumber, diced
- 1 large tomato, diced
- 1 tsp dried dill
- Juice of 1/2 lemon
- Salt and black pepper (for salad)
Instructions
- Cube the chicken and toss it with olive oil, paprika, garlic powder, oregano, salt, and pepper. Pan-sear until golden and cooked through.
- Boil the potatoes in salted water for 12–15 minutes. Mash with butter and warm milk until silky smooth.
- Mix diced cucumber and tomato, sprinkle with dried dill, a pinch of salt, black pepper, and a splash of lemon juice.
- In your container, layer creamy mashed potatoes in the center. Place the juicy chicken cubes on one side, and the bright, crisp salad on the other.
- Store up to 4 days in the fridge. Reheat the mash and chicken separately.
Notes
For extra flavor, marinate the chicken for a few hours or overnight. Consider using dairy-free butter and a plant-based milk alternative for a dairy-free option.
