Description
A rich, moist chocolate cake inspired by Roald Dahl’s Matilda. This iconic dessert is layered with fudge frosting and packed with flavor.
Ingredients
– 2 cups all-purpose flour
– 1 ¾ cups granulated sugar
– ¾ cup unsweetened cocoa powder
– 2 tsp baking powder
– 1 ½ tsp baking soda
– 1 tsp salt
– 1 cup buttermilk
– ½ cup vegetable oil
– 2 eggs
– 1 tbsp vanilla extract
– 1 cup boiling water
– 1 cup unsalted butter
– 1 cup cocoa powder
– 4 cups powdered sugar
– ½ cup milk
– 1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease two 9-inch round pans.
2. In a bowl, sift together flour, sugar, cocoa, baking powder, baking soda, and salt.
3. Add buttermilk, oil, eggs, and vanilla extract. Mix until smooth.
4. Slowly pour in the boiling water and stir to combine.
5. Divide batter between pans and bake for 30–35 minutes, or until a toothpick comes out clean.
6. Let the cakes cool completely before frosting.
7. For frosting, beat butter and cocoa until smooth.
8. Gradually add powdered sugar and milk, then mix in vanilla.
9. Layer and frost the cakes. Serve and enjoy!
