- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tbsp olive oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (10 oz) package sun-dried tomatoes, oil-packed, drained and chopped
- 1 (10 oz) package frozen cheese tortellini
- 2 cups chicken broth
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh basil for garnish
- 1/4 cup chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more.
- Stir in diced tomatoes (undrained), sun-dried tomatoes, chicken broth, and Italian seasoning. Bring to a simmer.
- Add tortellini and cook according to package directions, until heated through and tender.
- Stir in heavy cream, Parmesan cheese, oregano, salt, and pepper. Simmer for 2-3 minutes, or until sauce has thickened slightly.
- Add cooked chicken back to the skillet and stir to coat in the sauce.
- Garnish with fresh basil and parsley before serving.
Notes
Serve warm with a side salad or crusty bread to soak up the creamy sauce. Can be refrigerated for up to 3 days.
