- 3 medium-sized mangoes – thinly sliced
- 250g mascarpone cheese
- 300ml thickened cream
- 4 tablespoons caster sugar
- 250g Savoiardi biscuits
- 1 teaspoon vanilla essence
- 1 cup mango nectar (or orange juice)
Instructions
- Prepare the Pan: Line the base of a 20 or 22 cm springform cake pan with parchment paper.
- Prepare the Cream Mixture: In a large bowl, whisk the thickened cream until it begins to thicken. Add the caster sugar and vanilla essence, and whisk to combine. Fold in the mascarpone cheese until smooth.
- Assemble the Tiramisu: Dip Savoiardi biscuits in mango nectar and arrange at the base of the prepared pan. Spread half of the cream mixture over biscuits, followed by a layer of mango slices. Repeat layers with remaining biscuits, cream mixture, and mango slices.
- Add Shine: Brush the top layer of mango slices with a thin layer of gelatin or agar-agar for a glossy finish.
- Refrigerate: Cover and refrigerate overnight to set.
- Serve: Carefully remove the sides of the springform pan and serve chilled.
Notes
Use ripe mangoes for the best flavor and soak Savoiardi biscuits quickly to prevent sogginess.
