Description

A delightful twist on the classic Italian dessert featuring creamy mascarpone and ripe mangoes, perfect for summer gatherings.


Ingredients

  • 3 medium-sized mangoes – thinly sliced
  • 250g mascarpone cheese
  • 300ml thickened cream
  • 4 tablespoons caster sugar
  • 250g Savoiardi biscuits
  • 1 teaspoon vanilla essence
  • 1 cup mango nectar (or orange juice)

Instructions

  1. Prepare the Pan: Line the base of a 20 or 22 cm springform cake pan with parchment paper.
  2. Prepare the Cream Mixture: In a large bowl, whisk the thickened cream until it begins to thicken. Add the caster sugar and vanilla essence, and whisk to combine. Fold in the mascarpone cheese until smooth.
  3. Assemble the Tiramisu: Dip Savoiardi biscuits in mango nectar and arrange at the base of the prepared pan. Spread half of the cream mixture over biscuits, followed by a layer of mango slices. Repeat layers with remaining biscuits, cream mixture, and mango slices.
  4. Add Shine: Brush the top layer of mango slices with a thin layer of gelatin or agar-agar for a glossy finish.
  5. Refrigerate: Cover and refrigerate overnight to set.
  6. Serve: Carefully remove the sides of the springform pan and serve chilled.

Notes

Use ripe mangoes for the best flavor and soak Savoiardi biscuits quickly to prevent sogginess.
