A light and creamy dessert combining the sweet flavor of ripe mangoes with the smoothness of whipped cream, perfect for any occasion.
Ingredients

- 1 cup thickened cream (or whipping cream/heavy cream), cold (250ml)
- 2 large ripe mangoes (yielding about 2 1/4 cups mango puree)
- 1/4 cup icing sugar (powdered sugar)
- 1 teaspoon orange zest
- 2 teaspoons powdered gelatine
- 2 tablespoons orange juice (8 teaspoons)
- Extra mango for topping
Instructions
- Pour the cold thickened cream into a large mixing bowl and whip to stiff peaks. Refrigerate until needed.
- Cut the flesh from the mangoes and blend until smooth. Measure out 2 1/4 cups and mix with icing sugar and orange zest in a bowl.
- In a small saucepan, combine orange juice and sprinkle gelatine. Let sit for 3-4 minutes, then heat gently until dissolved.
- Mix the gelatine into the mango puree quickly.
- Gently fold one-third of the mango mixture into the whipped cream, repeating the process until fully combined.
- Divide the mousse among 6 ramekins and refrigerate for at least 4 hours or overnight to set.
- Garnish with extra mango before serving.
Notes
Serve cold in individual ramekins or glasses, topped with fresh mango. Store leftovers in the refrigerator, covered, for up to 2-3 days.
