Description

A delightful dessert combining the tropical flavors of mango with creamy mousse, perfect for any celebration.


Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup vegetable oil
  • 1/2 cup coconut milk
  • 1 tsp vanilla extract
  • 1 tsp coconut extract
  • 2/3 cup sweetened flaked coconut
  • 6 medium mangoes
  • 1/2 cup sugar (optional)
  • 1/2 cup cold water
  • 2 envelopes gelatin
  • 3 cups heavy whipping cream
  • 1 cup confectioners’ sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9-inch springform pan.
  2. Warm the eggs in a bowl of warm water for about 10 minutes.
  3. In a stand mixer, beat the warm eggs with sugar until fluffy.
  4. Sift the flour, baking powder, and salt into the egg mixture, and gently fold together.
  5. In another bowl, whisk oil, coconut milk, vanilla, and coconut extract. Fold this mixture into the batter with flaked coconut.
  6. Pour the batter into the prepared pan and bake for 22-25 minutes. Let cake cool on a wire rack.
  7. Once cooled, line the springform pan again, then place the cake back in.
  8. For the mango puree, soften the gelatin in cold water. Puree mangoes and cook with sugar (if desired).
  9. Stir softened gelatin into the warm mango mixture, then refrigerate until slightly thickened.
  10. In a separate bowl, whip heavy cream with confectioners’ sugar until peaks form.
  11. Gently fold whipped cream into the mango puree until well combined.
  12. Layer mango mousse over the cooled cake, then chill in the refrigerator for 4-6 hours.
  13. Garnish with fresh mango slices and mint leaves before serving.

Notes

Use ripe mangoes for the best flavor. You can bake the cake a day ahead of time and add the mousse on the day of serving.
