A delightful dessert bringing tropical mango flavors with light, fluffy cake layers filled with creamy mango goodness.
Ingredients

- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 4 large eggs (separated)
- 3/4 cup granulated sugar
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 cup fresh mango puree
- Fresh mango slices for garnish
Instructions
- Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
- In a bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat the egg yolks with half of the granulated sugar until pale.
- Add vegetable oil and vanilla extract to the yolk mixture and mix well.
- In another bowl, beat the egg whites with the remaining sugar until stiff peaks form.
- Gently fold the beaten egg whites into the yolk mixture.
- Pour the batter evenly into the prepared pans and bake for about 20 minutes or until a toothpick comes out clean.
- Allow the cakes to cool completely. Once cooled, layer with mango cream filling made from heavy cream, powdered sugar, and mango puree.
- Top with fresh mango slices for decoration.
Notes
Serve chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to three days.
