Description

A delightful dessert bringing tropical mango flavors with light, fluffy cake layers filled with creamy mango goodness.


Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs (separated)
  • 3/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 cup fresh mango puree
  • Fresh mango slices for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat the egg yolks with half of the granulated sugar until pale.
  4. Add vegetable oil and vanilla extract to the yolk mixture and mix well.
  5. In another bowl, beat the egg whites with the remaining sugar until stiff peaks form.
  6. Gently fold the beaten egg whites into the yolk mixture.
  7. Pour the batter evenly into the prepared pans and bake for about 20 minutes or until a toothpick comes out clean.
  8. Allow the cakes to cool completely. Once cooled, layer with mango cream filling made from heavy cream, powdered sugar, and mango puree.
  9. Top with fresh mango slices for decoration.

Notes

Serve chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to three days.
