Ingredients

  • 1 cup crushed chocolate cookies
  • 1/2 cup melted butter
  • 1 cup cream cheese
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup mango puree
  • 1 tbsp gelatin
  • 1/4 cup water
  • 1 cup heavy cream
  • Fresh mango slices for topping
  • Mint leaves for garnish
  • Powdered sugar for dusting

Instructions

  1. Mix the crushed chocolate cookies with the melted butter.
  2. Press the mixture into a pan to form a solid base.
  3. Chill the base in the fridge for 30 minutes.
  4. In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
  5. Dissolve the gelatin in water, then mix it into the mango puree.
  6. Whip the heavy cream until fluffy, then fold it gently into the cream cheese mixture.
  7. Layer this cream mixture over the chilled cookie base.
  8. Pour the mango puree mixture on top of the cream layer.
  9. Chill the entire cake in the fridge for 4 hours to set.
  10. Garnish with fresh mango slices, mint leaves, and powdered sugar before serving.

Notes

Chill well for the best texture and use ripe mangoes for a sweeter flavor.
