- 1 cup crushed chocolate cookies
- 1/2 cup melted butter
- 1 cup cream cheese
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 cup mango puree
- 1 tbsp gelatin
- 1/4 cup water
- 1 cup heavy cream
- Fresh mango slices for topping
- Mint leaves for garnish
- Powdered sugar for dusting
Instructions
- Mix the crushed chocolate cookies with the melted butter.
- Press the mixture into a pan to form a solid base.
- Chill the base in the fridge for 30 minutes.
- In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
- Dissolve the gelatin in water, then mix it into the mango puree.
- Whip the heavy cream until fluffy, then fold it gently into the cream cheese mixture.
- Layer this cream mixture over the chilled cookie base.
- Pour the mango puree mixture on top of the cream layer.
- Chill the entire cake in the fridge for 4 hours to set.
- Garnish with fresh mango slices, mint leaves, and powdered sugar before serving.
Notes
Chill well for the best texture and use ripe mangoes for a sweeter flavor.
