- 1/2 cup melted butter
- 1 cup cream cheese
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 cup mango puree
- 1 tbsp gelatin
- 1/4 cup water
- 1 cup heavy cream
- Fresh mango slices for topping
- Mint leaves for garnish
- Powdered sugar for dusting
Instructions
- Prepare the base: Mix the crushed chocolate cookies with melted butter. Press this mixture into a pan to form a solid base. Chill it in the fridge for 30 minutes.
- Make the cream layer: In a bowl, beat together the cream cheese, sugar, and vanilla extract until smooth.
- Prepare the mango mixture: Dissolve the gelatin in the water. Then mix it into the mango puree.
- Combine cream and cheese: Whip the heavy cream until it forms soft peaks. Gently fold it into the cream cheese mixture.
- Assemble the cake: Spread the cream cheese mixture over the chilled cookie base. Then, pour the mango puree mixture on top.
- Chill: Place the cake in the fridge and chill for at least 240 minutes to set.
- Garnish and serve: Before serving, top with fresh mango slices, mint leaves, and a light dusting of powdered sugar.
Notes
Use ripe mangoes for the best flavor. Whip the heavy cream well for light texture. Chill for at least 4 hours for best results.
