  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup mango puree
  • 1 tbsp gelatin
  • 1/4 cup water
  • 1 cup heavy cream
  • Fresh mango slices for topping
  • Mint leaves for garnish
  • Powdered sugar for dusting

Instructions

  1. Prepare the base: Mix the crushed chocolate cookies with melted butter. Press this mixture into a pan to form a solid base. Chill it in the fridge for 30 minutes.
  2. Make the cream layer: In a bowl, beat together the cream cheese, sugar, and vanilla extract until smooth.
  3. Prepare the mango mixture: Dissolve the gelatin in the water. Then mix it into the mango puree.
  4. Combine cream and cheese: Whip the heavy cream until it forms soft peaks. Gently fold it into the cream cheese mixture.
  5. Assemble the cake: Spread the cream cheese mixture over the chilled cookie base. Then, pour the mango puree mixture on top.
  6. Chill: Place the cake in the fridge and chill for at least 240 minutes to set.
  7. Garnish and serve: Before serving, top with fresh mango slices, mint leaves, and a light dusting of powdered sugar.

Notes

Use ripe mangoes for the best flavor. Whip the heavy cream well for light texture. Chill for at least 4 hours for best results.
