A rich and creamy cake from Malta, perfect for celebrations with layers of moist cake and creamy filling.
Ingredients

- 6 eggs
- 150 g sugar
- 6 tablespoons water
- 125 g wheat flour (Type 405)
- 2 teaspoons baking powder
- 1 tablespoon baked cocoa
- 80 g ground nuts
- 500 ml milk
- 2 packages vanilla pudding powder
- 3 tablespoons sugar
- 375 g butter
- 175 g dark chocolate
- 100 g cream
- 30 g butter
- 5 packages Maltesers chocolate balls (175 g)
Instructions
- Preheat the oven to 180°C (160°C fan) and line a 26 cm springform pan with baking paper.
- Separate the eggs. Beat the egg whites with sugar and water until stiff. Fold in the egg yolks.
- Sift in the flour, baking powder, and cocoa; fold in the ground nuts.
- Pour the batter into the prepared pan and bake for about 30 minutes. Let it cool on a wire rack, then cut through to make three layers.
- For the buttercream, heat two-thirds of the milk. Mix pudding powder with sugar and the remaining milk.
- Bring the milk to a boil, stir in the pudding mixture, and cook until thick. Pour into a dish, cover with cling film, and let it cool.
- Assemble the layers with the pudding and buttercream, decorate with Maltesers, chill, and serve.
Notes
Make sure your eggs are at room temperature for better volume. Fold the dry ingredients gently to maintain airiness. Allow buttercream to cool before spreading.
