Ingredients

  • 6 eggs
  • 150 g sugar
  • 6 tablespoons water
  • 125 g wheat flour (Type 405)
  • 2 teaspoons baking powder
  • 1 tablespoon baked cocoa
  • 80 g ground nuts
  • 500 ml milk
  • 2 packets vanilla pudding powder
  • 3 tablespoons sugar (for buttercream)
  • 375 g butter
  • 175 g dark chocolate
  • 100 g cream
  • 30 g butter (for ganache)
  • 5 packets Malteser chocolate balls (175 g)

Instructions

  1. Preheat the oven to 180°C (fan: 160°C) and line a 26 cm springform pan with baking paper.
  2. Separate the eggs. Beat the egg whites with sugar and water until stiff, then fold in the yolks.
  3. Sift the flour, baking powder, and cocoa into the mixture, and fold in the ground nuts.
  4. Pour the dough into the prepared pan and bake for about 30 minutes.
  5. Allow the cake base to cool on a rack before removing from the pan and slicing it into three layers.
  6. For the buttercream, heat two-thirds of the milk in a saucepan.
  7. Mix the vanilla pudding powder with sugar and remaining milk. Bring to a boil and cook until thickened.
  8. Pour the pudding into a dish, cover with cling film, and let cool.

Notes

Use room temperature eggs for better volume. Quality chocolate enhances the flavor.
