Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1 1/2 cups heavy cream, chilled
  • 68 drops food coloring (red, orange, yellow, green, blue, purple)
  • 1/2 cup whipped cream
  • Rainbow sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, granulated sugar, and melted butter together. Press this mixture into a 9-inch pie dish and bake for 10 minutes. Let it cool.
  2. In another bowl, whisk together the sweetened condensed milk, lemon juice, and vanilla extract until smooth.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold this whipped cream into the condensed milk mixture.
  4. Divide the filling into 6 bowls. Add a few drops of food coloring to each bowl to create the colors of the rainbow: red, orange, yellow, green, blue, and purple.
  5. Spoon each colored layer into the crust, starting with purple and ending with red. Use a knife to gently swirl the colors together.
  6. Chill the pie for 240 minutes or until it is set. Before serving, top it with whipped cream and rainbow sprinkles.

Notes

Serve chilled for a refreshing dessert. Store leftovers in the refrigerator for up to 3 days.
