- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 tsp vanilla extract
- 1 1/2 cups heavy cream, chilled
- 6–8 drops food coloring (red, orange, yellow, green, blue, purple)
- 1/2 cup whipped cream
- Rainbow sprinkles
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, granulated sugar, and melted butter together. Press this mixture into a 9-inch pie dish and bake for 10 minutes. Let it cool.
- In another bowl, whisk together the sweetened condensed milk, lemon juice, and vanilla extract until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold this whipped cream into the condensed milk mixture.
- Divide the filling into 6 bowls. Add a few drops of food coloring to each bowl to create the colors of the rainbow: red, orange, yellow, green, blue, and purple.
- Spoon each colored layer into the crust, starting with purple and ending with red. Use a knife to gently swirl the colors together.
- Chill the pie for 240 minutes or until it is set. Before serving, top it with whipped cream and rainbow sprinkles.
Notes
Serve chilled for a refreshing dessert. Store leftovers in the refrigerator for up to 3 days.
