- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 tsp vanilla extract
- 1 1/2 cups heavy cream, chilled
- 6–8 drops food coloring (red, orange, yellow, green, blue, purple)
- 1/2 cup whipped cream
- Rainbow sprinkles
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press this mixture into a 9-inch pie dish. Bake for 10 minutes and let it cool.
- In another bowl, whisk together sweetened condensed milk, lemon juice, and vanilla until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold this whipped cream into the condensed milk mixture.
- Divide the filling into 6 bowls. Add a few drops of food coloring to each bowl to create the layers.
- Spoon each colored layer into the cooled crust, starting with purple and ending with red, and gently swirl the colors.
- Chill the pie for at least 4 hours or until set. Before serving, top with whipped cream and sprinkle rainbow sprinkles on top.
Notes
Use gel food coloring for more vibrant colors and try adding a teaspoon of almond extract or lemon zest for extra flavor.
