- 1 (3-4 lb) beef tenderloin, trimmed
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup unsalted butter, melted
- 1/2 cup beef broth
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the beef tenderloin dry with paper towels and rub it evenly with olive oil.
- Season generously with minced garlic, rosemary, thyme, Dijon mustard, salt, and pepper, ensuring even distribution on all sides.
- Heat a large oven-safe skillet over medium-high heat. Sear the tenderloin for 2-3 minutes on each side until golden-brown.
- Pour melted butter over the tenderloin and add beef broth to the skillet, slightly covering the bottom with liquid.
- Transfer the skillet to the preheated oven. Roast for 25-30 minutes until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove from oven and let it rest for 10 minutes before slicing.
- Slice into thick medallions and serve with pan juices drizzled over the top.
Notes
Let meat rest before slicing to retain juices. Use a meat thermometer for perfect doneness.
