Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 3/4 cup butter
  • 3 eggs
  • 1 cup milk
  • 1 tsp baking powder
  • 1/2 cup pistachio paste
  • 1 cup heavy cream
  • 1/2 cup pistachio ganache
  • 1 tsp vanilla extract
  • 1/2 cup chopped pistachios

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two cake pans.
  2. In a bowl, mix the flour, cocoa powder, and baking powder.
  3. In another bowl, cream the butter and sugar together. Then, add the eggs one at a time, mixing well.
  4. Slowly alternate adding the dry ingredients and the milk to the butter-sugar mixture. Mix until everything is well combined.
  5. Divide the batter evenly between the two cake pans. Bake for 25-30 minutes or until a toothpick comes out clean. Let the cakes cool in the pans.
  6. Mix the pistachio paste with whipped heavy cream and spread it between the cooled layers of cake.
  7. Pour the pistachio ganache over the top of the cake and sprinkle with chopped pistachios.
  8. Refrigerate the cake for 1 hour before serving to let it set.

Ensure all ingredients are at room temperature and do not over-mix the batter for a fluffy cake.
