Description

A rich dessert combining chocolate, caramel, and crunchy pecans, perfect for special occasions.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup buttermilk, room temperature
  • 1/2 cup vegetable oil
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 1/2 cups caramel sauce
  • 1 cup chopped pecans
  • 1 cup sweetened shredded coconut
  • 1 cup chocolate ganache (melted chocolate mixed with heavy cream)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla extract to the mixture. Beat on medium speed until well combined.
  4. Reduce mixer speed to low and carefully add boiling water. Mix until smooth.
  5. Divide the batter evenly among the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick comes out clean. Allow to cool for 10 minutes, then remove from pans and let cool completely.
  7. Assemble the cake by placing one layer on a serving plate and spreading 1/2 cup of caramel sauce over the top. Sprinkle with 1/3 cup chopped pecans and 1/3 cup coconut. Repeat with the second layer.
  8. Place the third layer on top and spread chocolate ganache over the cake. Sprinkle remaining pecans and coconut on top, then drizzle with remaining caramel sauce.
  9. Serve the Luxurious Chocolate Caramel Pecan Cake at room temperature.

Notes

Ensure all ingredients are at room temperature for best results. Sifting dry ingredients creates a lighter cake.
