  • 1/4 cup powdered sugar
  • 2 tablespoons lavender syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries (for syrup)
  • 1/4 cup sugar (for syrup)
  • 1/4 cup water (for syrup)
  • 1 teaspoon lemon juice (for syrup)
  • Fresh blueberries (for garnish)
  • Lavender sprigs (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients and mix until well combined.
  4. Slowly pour in boiling water, mixing continuously until smooth.
  5. Gently fold in fresh blueberries.
  6. Divide the batter evenly between prepared pans.
  7. Bake for 30-35 minutes, or until a toothpick comes out clean from the center. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. In a large mixing bowl, beat butter and cream cheese until smooth. Gradually add powdered sugar until fully incorporated, then add lavender syrup and vanilla extract, beating on high until fluffy.
  9. In a small saucepan, combine blueberries, sugar, water, and lemon juice. Bring to a boil, then reduce heat and simmer for 10 minutes until thickened; let cool slightly.
  10. Place one layer of cake on a serving plate and spread frosting on top. Add second layer and frost the entire cake.
  11. Drizzle blueberry syrup over the top, allowing it to drip down the sides. Garnish with fresh blueberries and lavender sprigs.
