  • 1 tsp vanilla extract (for the filling)
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup heavy cream
  • 3 large apples, peeled, cored, and sliced
  • 2 tbsp unsalted butter (for the topping)
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp vanilla extract (for the topping)
  • 1/2 cup caramel sauce

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, mix the graham cracker crumbs, granulated sugar, melted butter, and vanilla extract. Press this mixture firmly into the bottom of a springform pan. Bake for 8-10 minutes and then let it cool.
  3. In a large bowl, beat the cream cheese with granulated sugar and vanilla extract until smooth. Add the eggs one at a time, mixing well after each. Then add the sour cream and heavy cream. Pour this mixture over the cooled crust and bake for 55-60 minutes. Let it cool and then refrigerate for at least 4 hours.
  4. For the topping, melt the butter in a skillet over medium heat. Add the apple slices and cook until they are softened. Stir in the brown sugar, cinnamon, nutmeg, and vanilla, cooking until tender. Let this mix cool.
  5. Spoon the caramelized apples over the cheesecake, drizzle with caramel sauce, and serve chilled.

Notes

Store leftovers in the refrigerator for up to a week. For added crunch, consider adding nuts to the apple topping.
