A rich chocolate cake layered with cherries and whipped cream, perfect for special occasions.

- 1 3/4 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 2 cups cherry pie filling
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round pans.
- In a large bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla. Beat this mixture on medium speed for 2 minutes.
- Stir in the boiling water. The batter will be thin.
- Pour the batter into the prepared pans. Bake for 30-35 minutes. Check if it’s done by inserting a toothpick; it should come out clean.
- Cool the cakes in the pans for 10 minutes, then remove them and let cool completely on wire racks.
- Cut each layer in half horizontally to create four layers.
- In a medium bowl, beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Place one cake layer on a serving plate. Spread 1/2 cup cherry pie filling on top. Repeat with remaining layers.
- Frost the top and sides of the cake with whipped cream. Garnish with chocolate chips and cherries if desired.
Notes
Ensure ingredients are at room temperature for best results. The cake should cool completely before frosting.
