Description

A classic dessert with layers of rich chocolate cake, cherry filling, and whipped cream, perfect for any celebration.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups cherry pie filling
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round pans.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Stir in the boiling water. Remember, the batter will be thin.
  5. Pour the batter evenly into the prepared pans and bake for 30-35 minutes. Check if it’s done by inserting a toothpick in the center; it should come out clean.
  6. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  7. Once cooled, cut each cake layer in half horizontally to create four layers.
  8. In a medium bowl, beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  9. On a serving plate, place one cake layer and spread 1/2 cup of cherry pie filling on top. Repeat this layering process with the remaining layers.
  10. Frost the top and sides of the cake with whipped cream. Garnish with chocolate chips and extra cherries if desired.

Notes

Store leftover cake in the refrigerator for up to 3 days or freeze for up to a month.
