A classic dessert with layers of rich chocolate cake, cherry filling, and whipped cream, perfect for any celebration.

- 1 3/4 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 2 cups cherry pie filling
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round pans.
- In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla to the dry ingredients. Beat on medium speed for 2 minutes.
- Stir in the boiling water. Remember, the batter will be thin.
- Pour the batter evenly into the prepared pans and bake for 30-35 minutes. Check if it’s done by inserting a toothpick in the center; it should come out clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- Once cooled, cut each cake layer in half horizontally to create four layers.
- In a medium bowl, beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
- On a serving plate, place one cake layer and spread 1/2 cup of cherry pie filling on top. Repeat this layering process with the remaining layers.
- Frost the top and sides of the cake with whipped cream. Garnish with chocolate chips and extra cherries if desired.
Notes
Store leftover cake in the refrigerator for up to 3 days or freeze for up to a month.
