Ingredients

  • 3 large eggs
  • 1 tbsp butter or olive oil
  • Salt & pepper to taste
  • 1 tbsp chopped fresh chives (for garnish)
  • 1/2 avocado, sliced
  • 23 slices smoked salmon
  • 1 small dollop of sour cream or Greek yogurt
  • 1 cup arugula or spring mix
  • 45 cherry tomatoes, halved
  • Drizzle of balsamic glaze

Instructions

  1. Whisk the eggs until smooth. Cook them low and slow in a pan with butter or olive oil until they are soft and fluffy. Season lightly with salt and pepper.
  2. Slice your avocado thinly and fan the slices out on the plate.
  3. Lay the smoked salmon next to your scrambled eggs.
  4. Toss together the arugula and halved cherry tomatoes, then drizzle with balsamic glaze.
  5. Top your scrambled eggs with fresh chives and serve with a dollop of sour cream or Greek yogurt.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Prepare avocado fresh to prevent browning.
