- 200g chocolate cookie crumbs
- 100g unsalted butter
- 500g cream cheese
- 150g sugar
- 2 eggs
- 200ml heavy cream
- 1 tsp vanilla extract
- 100g dark chocolate
- Cocoa powder for dusting
- Chocolate sauce for drizzling
Instructions
- Mix the chocolate cookie crumbs with the melted butter and press into the bottom of a springform pan.
- Bake the crust in a preheated oven at 180°C for 10 minutes, then let it cool completely.
- In a large bowl, beat the cream cheese with the sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition, then mix in the heavy cream and vanilla extract.
- Melt the dark chocolate and blend into half of the cheesecake mixture.
- Pour the chocolate mixture over the cooled crust, then carefully add the vanilla mixture on top.
- Bake the cheesecake at 160°C for about 50 minutes, let it cool, then refrigerate for at least 4 hours before serving.
- Serve with a drizzle of chocolate sauce and a dusting of cocoa powder.
Notes
Ensure all ingredients are at room temperature for the best results. Avoid overbaking; the cheesecake should have a slight jiggle in the center when done.
