- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups fresh strawberries, sliced
- 2 cups whipped cream
- 1/2 cup chocolate chips, melted
- Fresh strawberries and whipped cream for garnish
Instructions
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter.
- Press this mixture into the bottom of a 9-inch springform pan to form the crust.
- Refrigerate the crust for 30 minutes.
- In a large bowl, beat the softened cream cheese until smooth.
- Gradually add powdered sugar and vanilla extract while mixing until well combined.
- Fold in the sliced strawberries and whipped cream into the cream cheese mixture.
- Pour the cream cheese mixture over the prepared crust and smooth the top with a spatula.
- Drizzle melted chocolate over the top of the cheesecake.
- Refrigerate for at least 4 hours or until set.
- Before serving, garnish with fresh strawberries and additional whipped cream.
Notes
For best results, make the cheesecake a day in advance. Store leftovers in the refrigerator, best enjoyed within 3-4 days.
