A creamy and fruity cheesecake combining rich cream cheese with sweet and tangy mango puree.


Ingredients

  • 1/4 cup melted butter
  • 16 oz cream cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup mango puree
  • 1 tbsp gelatin
  • 1/4 cup water
  • 1 cup whipped cream
  • Crumbled graham crackers for topping
  • Fresh mango slices for garnish

Instructions

  1. In a bowl, mix the graham cracker crumbs with the melted butter. Press this mixture into small molds to form a crust. Chill the crust in the refrigerator for 30 minutes.
  2. In another bowl, beat the cream cheese and sugar until smooth and creamy.
  3. Add the eggs and vanilla extract to the cream cheese mixture, mixing well until combined.
  4. Dissolve the gelatin in water, then stir it into the mango puree until well combined.
  5. Gently fold the mango mixture into the cream cheese batter to create a beautiful swirl effect.
  6. Pour the mango cheesecake filling over the chilled crusts.
  7. Chill in the refrigerator for at least 240 minutes or until set.
  8. Before serving, top with whipped cream, crumbled graham crackers, and fresh mango slices.

Notes

Use ripe mangoes for the best puree flavor. For a stronger mango flavor, add extra puree to the cheesecake batter. If desired, add a drizzle of mango sauce before serving.
