A creamy and fruity cheesecake combining rich cream cheese with sweet and tangy mango puree.

- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 16 oz cream cheese
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup mango puree
- 1 tbsp gelatin
- 1/4 cup water
- 1 cup whipped cream
- Crumbled graham crackers for topping
- Fresh mango slices for garnish
Instructions
- In a bowl, mix the graham cracker crumbs with the melted butter. Press this mixture into small molds to form a crust. Chill the crust in the refrigerator for 30 minutes.
- In another bowl, beat the cream cheese and sugar until smooth and creamy.
- Add the eggs and vanilla extract to the cream cheese mixture, mixing well until combined.
- Dissolve the gelatin in water, then stir it into the mango puree until well combined.
- Gently fold the mango mixture into the cream cheese batter to create a beautiful swirl effect.
- Pour the mango cheesecake filling over the chilled crusts.
- Chill in the refrigerator for at least 240 minutes or until set.
- Before serving, top with whipped cream, crumbled graham crackers, and fresh mango slices.
Notes
Use ripe mangoes for the best puree flavor. For a stronger mango flavor, add extra puree to the cheesecake batter. If desired, add a drizzle of mango sauce before serving.
