Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup mango puree
  • 1 tbsp gelatin
  • 1/4 cup water
  • 1 cup whipped cream
  • Crumbled graham crackers for topping
  • Fresh mango slices for garnish

Instructions

  1. Mix the graham cracker crumbs with melted butter, then press this mixture into small molds. Chill in the refrigerator for 30 minutes.
  2. While the crust chills, beat together the cream cheese and sugar until the mixture is smooth.
  3. Add the eggs and vanilla extract to the cream cheese mixture, and mix well.
  4. In a small bowl, dissolve the gelatin in water. Then stir this into the mango puree.
  5. Fold the mango mixture into the cream cheese batter for a lovely swirl effect.
  6. Pour the cheesecake mixture over the chilled crusts.
  7. Chill the cheesecake in the refrigerator for about 240 minutes until set.
  8. Before serving, top with whipped cream, crumbled graham crackers, and fresh mango slices for added flavor and decoration.
