A delightful cheesecake combining creamy texture with zesty lemon-lime flavors, topped with cherry pie filling and crunchy pistachios.

- 2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- Zest of 1 lemon
- Zest of 1 lime
- 1/4 cup lemon juice
- 1/4 cup lime juice
- 1 cup cherry pie filling or fresh cherries
- 1/2 cup shelled pistachios, roughly chopped
Instructions
- Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat the cream cheese and sugar until smooth.
- Add eggs one at a time, beating on low speed until just combined.
- Mix in sour cream, vanilla extract, lemon and lime zest, and both juices until smooth.
- Pour the filling over the crust and smooth the top.
- Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour. Cool completely, then refrigerate for at least 4 hours or overnight.
- Before serving, spread cherry pie filling or fresh cherries over the cheesecake. Sprinkle with chopped pistachios for a beautiful and delicious garnish.
- Serve and enjoy!
