- 1 package (3.4 oz) instant lemon pudding mix
- 2 cups cold milk
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 container (8 oz) whipped topping, thawed
- 1 box graham crackers
- 1 can (16 oz) lemon pie filling
- Lemon slices and zest for garnish
Instructions
- In a large bowl, whisk together the instant lemon pudding mix and cold milk until thickened. Set aside.
- In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Gently fold the thawed whipped topping into the cream cheese mixture until well combined.
- In a 9×13 inch baking dish, arrange a single layer of graham crackers on the bottom. Spread half of the cream cheese mixture over the graham crackers. Then spread half of the lemon pudding over the cream cheese layer. Add another layer of graham crackers, followed by the remaining cream cheese mixture and lemon pudding. Top with a final layer of graham crackers.
- Spread the lemon pie filling evenly over the top layer of graham crackers.
- Refrigerate the dessert for at least 240 minutes, or until set.
- Before serving, garnish with fresh lemon slices and zest.
Notes
The cake can be made a day in advance for better flavor. Store leftovers in the refrigerator for up to 3 days.
