Luscious Chocolate Pumpkin Bars

Description

A delicious combination of pumpkin and chocolate with a hint of spices, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips (divided)
  • 1/2 cup dark chocolate, melted for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract, mixing until fully incorporated. Stir in the pumpkin puree.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in 1/2 cup of the semi-sweet chocolate chips.
  6. Pour the batter into the prepared baking dish and sprinkle the remaining chocolate chips on top.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and allow to cool completely in the pan. Drizzle the melted dark chocolate over the bars.
  9. Lift the bars out using the parchment paper and cut into squares.

Notes

Best served at room temperature. Can be enjoyed plain or with whipped cream or ice cream.
