- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 tablespoons sugar
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 cup sour cream
- 2 large eggs
- 1 tablespoon culinary lavender, finely ground
- 1 teaspoon vanilla extract
- 1 cup blackberries
- 1/4 cup sugar (for topping)
- 1 tablespoon water
- 1 teaspoon lemon zest
Instructions
- Prepare the Crust: Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a mini cheesecake pan and chill.
- Make the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add sour cream, eggs, lavender, and vanilla, blending well.
- Bake the Cheesecakes: Pour filling over crust and bake at 325°F (163°C) for 20 minutes. Let cool, then refrigerate for at least an hour.
- Prepare the Blackberry Topping: Cook blackberries, sugar, water, and lemon zest in a saucepan until sauce thickens, then cool.
- Assemble and Serve: Spoon blackberry topping over cheesecakes and garnish with lavender or blackberries.
Notes
Store cheesecakes in an airtight container in the refrigerator for up to five days. Add topping just before serving to keep crust crispy.
