Ingredients

  • 1 turkey sausage link, sliced
  • 1 small baked potato
  • 1/2 cup steamed broccoli
  • 1/4 cup shredded cheddar & Monterey Jack cheese
  • 1 tbsp light sour cream
  • 1/4 cup red, orange & yellow bell peppers, chopped
  • 1 tsp olive oil
  • Salt & pepper to taste
  • Optional: garlic powder, Italian seasoning

Instructions

  1. Bake the potato by piercing it with a fork, then microwave for 6–8 minutes or bake at 400°F for 45 minutes. After baking, slice it open, fluff it with a fork, and season to your liking.
  2. In a skillet, heat the olive oil over medium heat. Add the sliced turkey sausage and sauté until golden brown. Toss in the chopped peppers and cook until soft and slightly caramelized.
  3. Steam the broccoli until bright green and tender-crisp, about 5–6 minutes. Season with salt and pepper.
  4. Top the fluffy potato with sautéed sausage and peppers, shredded cheese, and a dollop of light sour cream. Add any additional seasonings you like.
  5. Arrange everything beautifully in a bowl or on a plate for a balanced meal prep. Enjoy every bite!
