- 1 turkey sausage link, sliced
- 1 small baked potato
- 1/2 cup steamed broccoli
- 1/4 cup shredded cheddar & Monterey Jack cheese
- 1 tbsp light sour cream
- 1/4 cup red, orange & yellow bell peppers, chopped
- 1 tsp olive oil
- Salt & pepper to taste
- Optional: garlic powder, Italian seasoning
Instructions
- Bake the potato by piercing it with a fork, then microwave for 6–8 minutes or bake at 400°F for 45 minutes. After baking, slice it open, fluff it with a fork, and season to your liking.
- In a skillet, heat the olive oil over medium heat. Add the sliced turkey sausage and sauté until golden brown. Toss in the chopped peppers and cook until soft and slightly caramelized.
- Steam the broccoli until bright green and tender-crisp, about 5–6 minutes. Season with salt and pepper.
- Top the fluffy potato with sautéed sausage and peppers, shredded cheese, and a dollop of light sour cream. Add any additional seasonings you like.
- Arrange everything beautifully in a bowl or on a plate for a balanced meal prep. Enjoy every bite!
