- 2 large potatoes, diced
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp chili powder
- Salt & pepper to taste
- 1 lb ground beef
- 1 tsp taco seasoning
- 1/4 cup diced red onion
- 1/2 cup shredded lettuce
- 1/2 cup shredded cheese
- 1/2 cup diced tomatoes
- 1/4 cup sour cream
- Chopped chives for garnish
Instructions
- Toss diced potatoes with olive oil, paprika, chili powder, salt, and pepper. Roast at 400°F (200°C) until golden and crispy.
- In a skillet over medium-high heat, cook ground beef with taco seasoning until browned.
- Pile the crispy roasted potatoes in a bowl, then top with cooked beef.
- Add shredded lettuce, diced red onion, diced tomatoes, shredded cheese, and a drizzle of sour cream.
- Garnish with chopped chives and serve.
