A fun and tasty meal blending classic taco flavors with crispy roasted potatoes.


Ingredients

  • 2 large potatoes, diced
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • Salt & pepper to taste
  • 1 lb ground beef
  • 1 tsp taco seasoning
  • 1/4 cup diced red onion
  • 1/2 cup shredded lettuce
  • 1/2 cup shredded cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream
  • Chopped chives for garnish

Instructions

  1. Toss diced potatoes with olive oil, paprika, chili powder, salt, and pepper. Roast at 400°F (200°C) until golden and crispy.
  2. In a skillet over medium-high heat, cook ground beef with taco seasoning until browned.
  3. Pile the crispy roasted potatoes in a bowl, then top with cooked beef.
  4. Add shredded lettuce, diced red onion, diced tomatoes, shredded cheese, and a drizzle of sour cream.
  5. Garnish with chopped chives and serve.
