- 1 grilled chicken breast, chopped
- 1/2 cup cooked white rice or cilantro-lime rice
- 1/2 cup black beans (canned, rinsed & drained)
- 1/2 cup corn kernels (cooked or canned)
- 1/2 cup chopped romaine lettuce
- 2 tbsp pico de gallo (fresh salsa)
- 2–3 tbsp guacamole (avocado, red onion, lime juice, cilantro, salt)
- 1 tsp olive oil (for chicken)
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- Salt & pepper to taste
Instructions
- Season & Grill That Chicken: Rub the chicken with olive oil, chili powder, garlic powder, salt, and pepper. Grill or pan-sear it until golden and juicy.
- Get Your Base Right: Scoop warm white rice or cilantro-lime rice into your bowl.
- Layer Like a Pro: Add rows of corn, black beans, chopped romaine, and chopped grilled chicken.
- Top With Guac & Salsa: Drop guacamole in the center and spoon on fresh pico de gallo.

Notes
