Instructions

  1. Season the chicken with cumin, chili powder, salt, and pepper. Grill until charred and juicy.
  2. Chop fresh romaine and prepare pico de gallo by mixing tomato, onion, cilantro, and lime juice.
  3. For the guacamole, mash avocado with red onion, lime juice, and cilantro.
  4. In a bowl, start with rice or cauliflower rice, then top with grilled chicken, black beans, corn, lettuce, pico, and guacamole.
