Description

A delicious and filling meal combining grilled chicken, colorful vegetables, and flavorful spices over a bed of brown rice.


Ingredients

  • 2 grilled chicken breasts, sliced
  • 1 cup cooked brown rice
  • 1/2 cup black beans (drained and rinsed)
  • 1/2 cup sautéed bell peppers (red & yellow)
  • 1/2 avocado, sliced
  • 1/4 cup corn (optional)
  • Fresh cilantro, chopped
  • 1 lime wedge (for garnish)
  • 1/4 cup sour cream or Greek yogurt
  • 1 tbsp mayonnaise
  • 1/2 tsp chipotle chili powder
  • 1 tsp lime juice
  • Salt to taste

Instructions

  1. Season chicken with fajita spices and grill until cooked through. Slice into strips.
  2. In a skillet, cook sliced bell peppers until slightly softened.
  3. In a small bowl, mix together all chipotle cream sauce ingredients.
  4. Layer rice, black beans, corn, sautéed peppers, and sliced avocado in a bowl.
  5. Add grilled chicken, drizzle with chipotle sauce, and sprinkle with cilantro. Serve with a lime wedge.

Notes

Serve warm as a standalone meal or with tortilla chips. Can be stored in an airtight container in the refrigerator for 3-4 days.
