- 2 grilled chicken breasts, sliced
- 1 cup cooked brown rice
- 1/2 cup black beans (drained and rinsed)
- 1/2 cup sautéed bell peppers (red & yellow)
- 1/2 avocado, sliced
- 1/4 cup corn (optional)
- Fresh cilantro, chopped
- 1 lime wedge (for garnish)
- 1/4 cup sour cream or Greek yogurt
- 1 tbsp mayonnaise
- 1/2 tsp chipotle chili powder
- 1 tsp lime juice
- Salt to taste
Instructions
- Season chicken with fajita spices and grill until cooked through. Slice into strips.
- In a skillet, cook sliced bell peppers until slightly softened.
- In a small bowl, mix together all chipotle cream sauce ingredients.
- Layer rice, black beans, corn, sautéed peppers, and sliced avocado in a bowl.
- Add grilled chicken, drizzle with chipotle sauce, and sprinkle with cilantro. Serve with a lime wedge.
Notes
Serve warm as a standalone meal or with tortilla chips. Can be stored in an airtight container in the refrigerator for 3-4 days.
