- 2 large baked potatoes
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 cup shredded cheddar cheese
- 6 strips of bacon, cooked and crumbled
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Bake the potatoes until tender. Let them cool before peeling and dicing.
- In a large bowl, combine the sour cream, mayonnaise, salt, and pepper. Mix well.
- Add the diced potatoes, cheddar cheese, crumbled bacon, and green onions to the bowl.
- Toss everything gently until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For best flavor, use freshly baked potatoes. Add other toppings like diced tomatoes or jalapeños for variation.
