- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- Zest of 2 lemons
- 1/2 cup lemon juice
- 3 large eggs
- Yellow food coloring (optional)
- 1 cup lemon curd
- Fresh berries for garnish
Instructions
- Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press mixture into the bottom of the prepared pan and bake for 10 minutes. Let cool.
- In a large bowl, beat the cream cheese until smooth. Add sugar and mix well. Beat in sour cream, vanilla extract, lemon zest, and lemon juice. Mix until smooth. Add eggs one at a time, mixing well after each addition. Optionally, add yellow food coloring.
- Pour the batter over the cooled crust, spreading evenly. Bake for 60-70 minutes, until set. Let cool in the oven with the door slightly cracked for 1 hour, then refrigerate for at least 4 hours or overnight.
- Spread lemon curd over the top of the chilled cheesecake and garnish with fresh berries before serving.
Notes
Ensure cream cheese is softened before mixing for a smooth batter. Adjust lemon juice for more flavor if desired.
