Ingredients

- 2 tbsp olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 tsp dried oregano
- 1 tsp dried thyme (or Italian seasoning)
- Salt & black pepper, to taste
- 4 cups vegetable or chicken broth
- 1 can (14 oz) artichoke hearts, drained and quartered
- Juice of 1 lemon
- Fresh parsley, for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic, carrots, and celery; cook for another 5-7 minutes until vegetables are tender.
- Add dried oregano, thyme, salt, and pepper; stir to combine.
- Pour in the broth and bring to a simmer. Cook for 10-15 minutes.
- Add artichoke hearts and lemon juice; simmer for an additional 5 minutes.
- Adjust seasoning as needed, then serve hot, garnished with fresh parsley.
Notes
Feel free to add other vegetables like spinach or kale for extra nutrients. Adjust the amount of lemon juice to match your taste; more lemon will give it a brighter flavor.
