Ingredients

- 250 g of mascarpone cheese
- 3 eggs (separated into yolks and whites)
- 100 g of sugar
- 2 lemons (zest and juice)
- 200 ml of water
- 150 g of ladyfinger biscuits
- 3 tablespoons of limoncello (optional)
- 2 tablespoons of sugar for the syrup
- Lemon zest and mint leaves for garnish
Instructions
- Prepare the lemon syrup: Heat the water with the sugar and the juice of the lemons. Let it cool, then add the limoncello if you wish.
- Make the cream: Whisk the egg yolks with the sugar until pale, then add the mascarpone cheese and the lemon zest.
- Whip the egg whites: Beat the egg whites until stiff peaks form, then gently fold them into the cream mixture.
- Assemble the tiramisu: Dip the ladyfinger biscuits into the syrup and layer them with the cream mixture in a dish. Repeat until all ingredients are used.
- Chill and enjoy: Refrigerate for at least 240 minutes before serving it cold.

Serve chilled and consider topping with extra lemon zest and fresh mint leaves.
