Ingredients

  • 4 oz goat cheese
  • 1 tbsp fresh thyme leaves (plus extra for garnish)
  • 1 tbsp lemon zest (plus extra for garnish)
  • 1 tbsp honey (plus extra for drizzling)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped toasted almonds or pecans (optional)
  • Crackers, breadsticks, or fresh vegetable slices for serving

Instructions

  1. In a medium mixing bowl, combine the cream cheese, goat cheese, thyme, lemon zest, honey, salt, and black pepper. Mix until well-blended.
  2. Transfer the cheese mixture onto a sheet of plastic wrap and shape it into a log. Wrap tightly and refrigerate for at least 2 hours or until firm.
  3. Spread the chopped almonds or pecans on a flat surface and roll the chilled cheese log in the nuts.
  4. Unwrap the cheese log, place it on a serving platter, garnish with extra lemon zest and thyme leaves, and drizzle with honey.
  5. Serve with crackers, breadsticks, or fresh vegetables for dipping and spreading.
