Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
- In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
- In another bowl, beat the butter until creamy. Add the eggs one at a time, then stir in sour cream, lemon juice, lemon zest, and vanilla until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Whisk together powdered sugar, lemon juice, and lemon zest for the glaze.
- Once cooled, drizzle the glaze over the loaf.
Notes
Ensure butter is softened for easy mixing and don’t overmix the batter. For extra lemon flavor, use fresh lemon juice and zest.
