Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups cooked, shredded chicken
  • 1 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Juice of 1 large lemon
  • 2 tablespoons fresh dill, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.
  2. Stir in garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a boil. Add orzo, reduce heat to a simmer, and cook for 8–10 minutes until orzo is tender.
  4. Stir in shredded chicken, oregano, pepper, and salt. Simmer for another 5 minutes.
  5. Add lemon juice and chopped dill. Taste and adjust seasoning if needed.
  6. Serve hot, garnished with lemon slices and more fresh dill if desired.

Notes

For added nutrition, consider adding spinach or kale. Adjust the broth amount for a thicker consistency.
