Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup orzo pasta
- 2 cups cooked, shredded chicken
- 1 teaspoon dried oregano
- 1/4 teaspoon black pepper
- Salt to taste
- Juice of 1 large lemon
- 2 tablespoons fresh dill, chopped
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.
- Stir in garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a boil. Add orzo, reduce heat to a simmer, and cook for 8–10 minutes until orzo is tender.
- Stir in shredded chicken, oregano, pepper, and salt. Simmer for another 5 minutes.
- Add lemon juice and chopped dill. Taste and adjust seasoning if needed.
- Serve hot, garnished with lemon slices and more fresh dill if desired.
Notes
For added nutrition, consider adding spinach or kale. Adjust the broth amount for a thicker consistency.
