Description

A delightful dessert combining creamy cheesecake with the zesty brightness of lemon and the crunch of Oreo cookies.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 5 Tbsp melted unsalted butter
  • 1415 Lemon Oreos
  • 24 oz cream cheese, softened
  • 1/2 cup white granulated sugar
  • 3 Tbsp sour cream
  • 1 egg, room temperature
  • 3/4 cup heavy whipping cream
  • 2 tsp vanilla extract
  • 2 Tbsp cornstarch
  • Zest from 1 large lemon
  • 6 oz whipped cream topping
  • Remaining half of the Lemon Oreo cookies, chopped

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a small bowl, mix together the graham cracker crumbs, melted butter, vanilla extract, and brown sugar until well combined. Press the mixture across the bottom and sides of the springform pan, laying the Lemon Oreo cookies on top.
  3. In a mixing bowl, beat the softened cream cheese until smooth. Add cornstarch and sugar, then mix in the egg, followed by the sour cream, vanilla, heavy cream, and lemon zest until smooth.
  4. Pour the cheesecake batter into the prepared pan and tap to settle. Wrap the pan with foil and place it in a roasting pan with hot water halfway up. Bake for 60-65 minutes.
  5. Turn off the oven and keep the cheesecake inside with the door slightly open for 5 minutes.
  6. Remove the foil and let the cheesecake cool on the counter, then refrigerate for at least 4 hours.
  7. Spread whipped cream topping on the chilled cheesecake and sprinkle the chopped Lemon Oreo cookies on top. Enjoy!

Notes

Make sure your cream cheese is at room temperature for a smooth batter. Use fresh lemon zest for the best flavor.
