Ingredients

- 200 g of mascarpone
- 150 g of sugar
- 100 g of butter
- Juice and zest of 2 lemons
- A pinch of salt
- 3 eggs
- 150 g of flour
- 1 bag of chemical yeast
Instructions
- Preheat the oven to 180°C (350°F). Grease a cake pan.
- In a bowl, combine the mascarpone, sugar, and butter until smooth.
- Add the lemon juice, lemon zest, and a pinch of salt, mixing well.
- Beat in the eggs one at a time.
- Sift in the flour and baking powder, folding gently until just combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes or until a skewer comes out clean.
- Allow to cool before serving.
Notes
Serve warm or at room temperature with a dusting of powdered sugar. Can be paired with berries or whipped cream.
