A refreshing cheesecake combining cream cheese, zesty citrus, and sweet cherries on a crunchy pistachio crust.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup crushed pistachios
- 1/2 cup melted butter
- 16 oz cream cheese, softened
- 3/4 cup sugar
- 1 tsp lemon zest
- 1 tsp lime zest
- 2 tbsp lemon juice
- 2 tbsp lime juice
- 1 tsp vanilla extract
- 2 eggs
- 1/2 cup chopped maraschino cherries
- Extra cherries and pistachios for topping
Instructions
- Mix the graham cracker crumbs, crushed pistachios, and melted butter together in a bowl. Press into the bottom of a pan to form the crust.
- In another bowl, beat the cream cheese and sugar until smooth. Add lemon zest, lime zest, lemon juice, lime juice, and vanilla extract. Mix well.
- Add eggs one at a time, beating well after each addition.
- Gently fold in the chopped maraschino cherries. Pour the mixture over the prepared crust.
- Bake in a preheated oven at 325°F (160°C) for 40-45 minutes or until the center is set. Let cool completely.
- Once chilled, top with extra cherries and pistachios. Optionally drizzle with lime glaze.
Notes
Use room temperature cream cheese for a smooth batter. Adjust sugar based on your sweetness preference.
