Description

A refreshing cheesecake combining cream cheese, zesty citrus, and sweet cherries on a crunchy pistachio crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup crushed pistachios
  • 1/2 cup melted butter
  • 16 oz cream cheese, softened
  • 3/4 cup sugar
  • 1 tsp lemon zest
  • 1 tsp lime zest
  • 2 tbsp lemon juice
  • 2 tbsp lime juice
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup chopped maraschino cherries
  • Extra cherries and pistachios for topping

Instructions

  1. Mix the graham cracker crumbs, crushed pistachios, and melted butter together in a bowl. Press into the bottom of a pan to form the crust.
  2. In another bowl, beat the cream cheese and sugar until smooth. Add lemon zest, lime zest, lemon juice, lime juice, and vanilla extract. Mix well.
  3. Add eggs one at a time, beating well after each addition.
  4. Gently fold in the chopped maraschino cherries. Pour the mixture over the prepared crust.
  5. Bake in a preheated oven at 325°F (160°C) for 40-45 minutes or until the center is set. Let cool completely.
  6. Once chilled, top with extra cherries and pistachios. Optionally drizzle with lime glaze.

Notes

Use room temperature cream cheese for a smooth batter. Adjust sugar based on your sweetness preference.
